There seems to be a unique problem with editing the website header for different devices because whenever I make changes in the mobile version, it instantly effects the layout of elements in the desktop version or when I delete a button in the mobile version it gets deleted in the desktop version as well.

Is this a Divi 5 problem or am I doing sth wrong?

The mobile view / desktop view only affect the item settings. But if you delete a module, then it will be gone for all view. Same goes if you add a module, it will show on all view.

To hide a module from mobile view, you should go to module settings > Advanced > Visibility & set it there.

Yup, adding / deleting module affect all views. So to remove it from mobile only, just set the Visibility option in the module settings, instead of deleting the module itself.
