    On the Demo page, it says, "SET DIFFERENT HEADER PER PAGE", but I cannot find documentation anywhere that shows how to do this. Please can you help.

    Just go to edit the page in backend builder & that option is in the right sidebar. See screenshot below.

    Added to documentation as well.
